gozzo_about_01.jpg

The wisdom of surviving the long winter is strongly applied in food preservation and is still alive today. Wild vegetables in early spring and mushrooms in late autumn are preserved by applying the drying or salting technique which has been passed down for generations. Fermented foods brewed in the snow such as sake, miso and soy sauce; are stored at a low temperature to deepen their flavor. The restaurant Murangozzo which has been certified as a Michelin restaurant, uses variety of fresh local ingredients found in the Snow Country and creates unique dishes which draws out their natural flavors. Murangozzo is the go to place if you want to experience the "Snow Country Gastronomy".
